Whuacamole Tailgate Plate by Meat Mitch
Meat Mitch (also known as Mitch Benjamin) is a big name in Kansas City BBQ. He has restaurants all over the city, he wins regional and national competitions and he even gets to cook dinners for the Royals baseball team every once in a while. As we’re entering the busy fall sports season, Mitch thought he would provide us with one of his favorite tailgate plates that features his famous Whomp! rub. It’s quick and easy, so cooks of any skill level are invited to try it at their next big pre-game session.
Whuacamole Ingredients:
- 6 medium avocados – mashed
- 4 limes – juiced
- 1/2 Red onion finely diced
- Handful of chopped cilantro
- 2 tsp Kosher salt
- 2 pinches Black Ground Pepper
- 3 T. Meat Mitch Stay Hot Sauce
- Mix well
- 1 tsp Meat Mitch Whomp Rub or Meat Mitch Steer Season on top
White Sauce Slaw Ingredients:
- Angel hair coleslaw – 10oz bag
- 1 Lime
- Chopped carrots – 5oz
- 1 Cup – Meat Mitch White Sauce
- 1/2 t. Kosher Salt
Mix all ingredients well and let sit for half an hour to let flavors combine
Use beef hotdogs Jumbo sized and lay them onto a medium heat gas or charcoal grill until cooked through with some grill marks on the sides. Pull from the grill and immediately lay the dog into a split top hot dog bun, lay in a large, thin sliced pickle wedge. Add a bead of Meat Mitch Yellow Brick Road Sauce and Naked BBQ Sauce then top with White Sauce Slaw.
Serve Whuacamole and chips on the side for the ultimate tailgate plate!
