Grilled S’more Bites by Megan Day
Our friend Megan Day is one of our favorite pro circuit pitmasters who has tussled with the best in the business on popular food shows like Bobby Flay’s BBQ Brawl. She has the spirit (and trophy collection) of a BBQ competitor, but she creates great original dishes with the heart of a mom that are simple enough to make with the whole family. This time, it’s no different – she is sharing a great charcoal-smoked family favorite you can cook with the kids during a backyard campout or a family get-together.
Her Grilled S’more Bites feature all the fun flavors of a S’mores dessert without the sticky mess or fear of marshmallows catching fire! These are a two-bite dessert your cookout guests can create in-person or you can make ahead and display. The fully baked Phyllo shells add a stunning crunch to these classic S’more bite flavors.
Grilled S’more Bites Ingredients:
- S’more Bites
- One pack of fully baked Phyllo Shells (15 shells)
- 1/2 cup chocolate chips
- 1 cup mini marshmallows
- 2-3 graham crackers
Prepping and Grilling Tools:
- Rolling pin
- 1 small sealed bag
- Aluminum foil
- Charcoal grill or campfire
- Chef Torch (optional)
Grilled S’more Bites Cooking Directions:
1. Create a 2-zone fire by banking your charcoal to one side of the grill.
2. Place a small strip of foil on the indirect heat side of the grill.
3. Place graham crackers in a small sealed bag and crush them by rolling and pounding the
crackers. Place crushed crackers in a bowl.
4. Remove the Phyllo Shells from its packaging and set out remaining ingredients.
5. Guests can place their favorite S’mores topping amounts into their shell.
6. Place filled shells on foil strip and place the lid on the grill. Allow shells to heat for 4 or 5
minutes or until chocolate is melting and the marshmallows are toasty.
Helpful Tips:
If you plan to do a large batch ahead of time, consider torching the top to give the marshmallows a campfire look.
Get creative with the toppings! Add diced candy bars, nuts, and cookies.
