Brunch Tacos by Megan Day

Megan Day’s Brunch Tacos Ingredients:

  • 10 Small to medium tortillas
  • 3 cups Mexican Melting Cheese, shredded
  • 6 eggs, scrambled
  • 2 lbs Breakfast Sausage, browned
  • 2 cups White Queso Cheese, shredded
  • 1 cup cherry tomatoes, blistered
  • 2 cups lettuce , shredded
  • 1/2 cup cilantro, chopped
  • 1/2 cup sour cream
  • 1 lime

Pre-heat your non-stick pan or griddle to medium high heat. Megan has made this dish at our stores on both the Blackstone griddle and the Weber griddle.

Place 1/4 cup of Mexican melting cheese onto griddle. Once it melts, place one tortilla on cheese and allow the cheese to almost burn. As you remove the cheese-coated tortilla from the griddle, fold it so the cheese is on the outside and repeat for remaining tortillas.

Set Brunch fillings out for guests to fill in their cheese-crusted tortillas. Additional toppings could include Chorizo, onions, avocados, bacon, green onions, potatoes, black beans, red onions, and jalapeños.

TIPS:
Try browning the sausage and then adding in the eggs to make a sausage and egg
scramble for the filling.

Blistering the tomatoes adds a nice sweetness.

Pop the cheese-coated tortillas in the microwave for a few seconds to make them pliable
again.

Add a little milk to your sour cream to loosen it up for pouring.
