Bar Style Pizza With an Ooni Oven
The bar style pizza is famous for its thin, crispy crust and generous toppings that make it a natural double-decker fold-over meal. The crispy crust happens because Ooni pizza ovens create high-intensity heat that almost instantly caramelizes oils and cheeses, and sears the surface of meats popular on pizzas like pepperoni, sausage and Canadian bacon. This recipe goes a bit further than the traditional bar style pie and adds ricotta, dried oregano and garlic oil for the ultimate savory finish.
The equipment list is fairly short, but remember; this will be tough to recreate in a traditional oven, since most traditional ovens have a top temperature range of about 550 – 600F. The Ooni ovens can get all the way up to around 900F.

Bar Style Pizza Ooni Oven Ingredients:
- 6.3/11.2oz (180/320g) classic pizza dough
- 3-4 tbsp classic pizza sauce
- Oil, for greasing
- 2 garlic cloves, finely chopped
- 1.7oz (50g) shredded low-moisture mozzarella
- 1.7oz (50g) shredded cheddar
- Handful cupping pepperoni
- 2.8oz (80g) sausage meat
- 2.8oz (80g) ricotta
- 1 tsp dried oregano
- Garlic oil, to finish
For the sauce, here’s a good way to prepare an easy Classic Bar Style Pizza Sauce. With a hint of garlic, salt and basil, it’s the ideal pizza sauce that will help to bring out the flavors in the other ingredients used here.
Classic Bar Style Pizza Sauce Ingredients:
Makes enough sauce for 8 x 12” bar style pizzas
- 2 tbsp olive oil
- 2 garlic cloves, crushed or finely chopped
- 4 cups (800g) canned whole plum tomatoes
- 2 heaped tsp sugar
- 1 tsp salt
- Handful of basil leaves, roughly chopped
- Pinch of freshly ground black pepper
Cooking Directions
Place the oil in a pan over a medium heat. When warm, add the garlic and fry until softened but not brown.
Pour the can of plum tomatoes in the pan and use a masher or fork to crush them down.
Add all the remaining ingredients, then simmer on a low heat for 20 minutes, or until the flavor has deepened and the sauce has thickened slightly.
Bar Style Pizza Dough Directions:
Place your dough ball in the center of an oiled pan. With wet fingers, begin to push the dough from the center outward to fill the pan. This will take a while, so don’t rush it. Accidentally creating a thin spot in the dough will make it very difficult to push the pizza into the Ooni oven smoothly. Plan on pushing the dough toward the edge of the pan for roughly fifteen minutes, perforating it with a fork several times as you go.
